Monday...

So today I was supposed to work from 2-11 but it was slow so I got sent home after only working for an hour, which was nice because I found out today that I'm not going to be able to keep my job in the fall so I wasn't in the best mood to stay either. So then I went home and Derek and I helped each other put some pictures up on the wall and then Derek worked on putting together our new desk while I cooked dinner.
So this is Derek hard at work finishing his amazing master piece!




& this is what I made for dinner, the picture may not do it much justice but Derek said it was really good! And it was super simple to make!


Salsa Chicken
Ingredients:
- one large chicken breast
- one cup mild salsa
- 2 table spoons of taco seasoning
- 1/2 cup monetary jack cheese (shredded)
- 1/4 cup water


Directions:
- preheat oven to 400
- mix taco seasoning, water, & chicken in zip lock bag and let marinate in the fridge for 30 mins
- lightly grease a small pan and then coat the bottom with a small layer of salsa
- place the chicken in the pan and sprinkle with more seasoning if desired
- spread remaining salsa on top of chicken
- bake for 25-30 mins
- take out of oven and sprinkle cheese over top
- continue cooking for 2-3 minutes until cheese is well melted
- take out of oven and ENJOY!
