DIY Hot Chocolate Mix

I don't know how many times this winter I've gotten a craving for hot chocolate, and then we haven't had it in our pantry. I can't believe this weekend was the first time I'd had it all fall and winter so far! I mean, now that I have this recipe I'll be making it daily and watching the number on the scale go up and up (but that's besides the point). The point is, you can make hot chocolate at home in a matter of minutes, and at least you can feel good about the fact that there aren't any strange chemicals in it like the packets you get at the store. To be honest, I don't know if there are chemicals in the store bought stuff, but I'm sure it's probably a safe assumption...



Ingredients: 
Yields two, eight ounce servings
1/4 cup water
2 tbsp unsweetened cocoa powder
2 tbsp white sugar
1 1/2 cups milk
1/4 tsp vanilla
whipped cream and marshmallows for optional garnish

Directions:
Combine water, cocoa, and sugar in a 16 ounce glass measuring cup and microwave for 30 seconds. Stir well to create chocolate syrup. Add the milk to the chocolate mixture and microwave on high for another minute, to a minute and a half. Add the vanilla and pour the drink into two 8oz mugs.
