When I was in NY around Christmas time someone said to me, "There hasn't been as many yummy recipes on your blog as there used to be". If we're being super duper honest... Cooking has become a total chore for me lately. I still haven't found the best balance between having happy children at 5pm, and cooking a super delicious dinner for Derek and the kids. I know, I know, I had a baby 10 months ago and need to get over it and just do it... But it's hotter than Hates here in Georgia right now, and we don't have a working AC, I'm sunburned, and it's that time of the month... So tonight was not the night to fight the dinner battle. 

This morning while I was at Walmart I decided to stop by the deli section and pick up some of their fried chicken, because I was craving it, and the fact that our AC is out of commission, I didn't want to be slaving over the stove tonight. Did you know that you can order bulk orders of fried chicken from Walmart up to 100 pieces? I love that you can have them do all the dirty work of cooking up the main part of your meal, and all you have to worry about it making the sides. Or you can get those at the deli too but come on... these biscuits. 

These biscuits were totally inspired by those cheddar bay biscuits that we all know and love. We also happened to have some bacon and chives in the fridge though that we needed to use up so I threw them in there too! They are so flavorful and delicious, and who doesn't love fried chicken and biscuits...

Ingredients:
4 oz cheddar cheese, grated
3 tbsp minced chives
1/2 cup bacon, cooked and chopped
2 cups flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup butter
3/4 cup milk

Directions:
Preheat the oven to 450°

In a small bowl toss together cheese, chives, and bacon. Set aside.

In a separate bowl, whisk together flour, baking powder, and salt. Use a pastry cutter, or two forks to cut in the butter. 

Add the milk and stir just enough to bring the mixture together. This should make a soft dough. Gently fold in the cheese mixture.

Turn dough out onto a floured surface and knead for one minute. 

Pat or roll dough out t o 1/2 to 3/4in thickness. 

Cut into rounds. You can use a biscuit cutter or the mouth of a glass cup. I used a tall glass.

For crisp biscuits, place far apart on an ungreased baking sheet. For fluffier biscuits, place them close together on an ungreased baking sheet.

Bake 12-15 minutes or until brown on the top.

  1. Noooommmmm! This is one of those things I would have to size down the recipe to like 2 because otherwise I would most definitely eat them all myself >.< Look sooo good <3
