Slow Cooker Chocolate Fudge Cake

I've seen so many recipes over the last few years for cakes and other desserts that you can make in your slow cooker. I've been so hesitant to try them because I always thought that they would either be super dry, or incredibly mushy. Those are typically two things I'm not going for when I'm trying to make dessert. Finally though, a week or so ago, I decided to give the whole "cake in the crock pot" thing a try, and I was pleasantly surprised!

When I was making this cake the recipe said to not let it cook for more than two hours in your slow cooker. I was sick and fell asleep while it was cooking and left in in there for five straight hours. Luckily, after two hours, my slow cooker bumped it down to the warm setting and it was still perfect! It wasn't too dry, it definitely wasn't a soupy mess like I'd imagined... it was just a perfectly baked cake with a delicious chocolate fudge running through it. 

I was too sick to eat it, but luckily my husband and kids were more than happy to taste test for me. They all gave it rave reviews and now I'm looking forward to making some again so that I can try some too. I wouldn't say that this is necessarily easier than making a normal cake in the oven. It's just as labor intensive, but it is incredibly delicious, and well worth it!




Ingredients:
1 cup flour
1/2 cup sugar
1/4 cup cocoa powder
1 tsp baking powder
1/2 tsp salt
3/4 cup almond milk (or whatever milk you have)
1/3 cup vegetable oil
1 tsp vanilla extract
3/4 cup semi sweet chocolate chips
Fudge Topping:
1/2 cup sugar
3 tbsp cocoa power
1 1/2 cups boiling water
whipped cream or ice cream optional for serving


Directions:

Prepare your slow cooker by spraying it with non-stick cooking spray. In a medium bowl, whisk together all of the dry ingredients, and then mix in all of the wet ingredients. Pour the batter into your crock pot, and then sprinkle the top with the chocolate chips.

Boil your water on the stove. Once boiling, add in the 3 tbsp cocoa powder, and the 1/2 cup sugar. Whisk it all together and then pour it on top of the cake batter. DO NOT STIR it together. Just set the slow cooker to cook on low for 2 hours. When it's done, the cake will be baked, and the hot fudge will be sitting on the bottom. Serve warm with whipped cream, or vanilla ice cream!

  2. That looks so good! I've never tried a cake in the slow cooker but I remember a slow cooker dessert a college roommate used to make that was amazing, so I'll have to give this one a try!
