Lemon Garlic Chicken

When I moved to Utah for my freshman year of college I had basically only cooked about six times in my entire life. I knew the basics, but I just never really had to prepare meals for myself, so I didn't. My friend Haley flew out to Utah with me to help me get settled, and she bought me The Healthy College Cookbook so that I would know how to cook and not starve to death.


That cookbook basically saved my life. If you have a child who is going away to college I would highly reccommend getting them that book. It has a glossary full of cooking terms and what they mean, and all the recipes use few ingredients and taste amazing. None of this is sponsored by the way.


I unfortunately lost my copy of that book during one of our moves. For the life of me I don't remember getting rid of it, but I have no idea where it is. One of my favorite recipes that I have memorized and make all the time is this lemon chicken recipe. I made this for my mom for Mother's Day when I went back to NY for a week after my first semester of college and she even gave it an enthusiastic two thumbs up.

Lemon Garlic Chicken

Lemon Garlic Chicken

Lemon Garlic Chicken is the perfect quick and easy, healthy weeknight meal that the entire family will love.
Cook time: 30 MinTotal time: 30 Min

Ingredients

  • 1lb boneless skinless chicken breast
  • 1 lemon
  • 1 tsp chopped garlic
  • salt and pepper to taste
  • 1/4 cup water

Instructions

  1. Preheat oven to 350°
  2. In a 2 quart baking dish, pour the water in the bottom and then add in the chicken. Salt and pepper the chicken to taste and evenly distribute the garlic on top. Squeeze the juice of one lemon over the top of the chicken, and thinly slice the other half and place on top of the chicken.
  3. Bake in the oven for about 25-30 minutes or until fully cooked in the center. Serve warm with your favorite sides! (I used brown rice and broccoli!)
