Here we are at the beginning of another week where I share with you what food we bought at the store last week, what meals we planned for, and what we actually ate. This week we didn't stick to the plan entirely. I'm working on a project with Ortega right now, and they needed me to reshoot a video for them for the third time. I'm so over the entire thing at this point, but because we were reshooting, we ate sweet pork burritos that I had to make for the video for two of the nights, and didn't get to actually eat the roast beef we bought. That will be made for dinner tomorrow night though, which is perfect because we have plans tomorrow and won't have time to run to the store. It all works out.
1. Sheet Pan Chicken Fajitas: This was my first time ever making or eating fajitas, and they did not disappoint. This recipe was super easy, and only took 20 minutes to cook on a busy Monday night. I ate the leftovers for lunch in a salad a few days throughout the week too, and they were super yummy.
2. Buffalo Chicken Taco Salad: This meal wasn't hard, or anything special, but it was quick and easy. Actually, this was my least favorite meal of the week because I put way too many fresh jalapenos in my salad and my mouth was on fire. If we make it again, canned jalapenos all the way.
3. Shrimp Thai Soup: This was my favorite meal of the week. It was easy to make, and came together in about 20 minutes. The kids ate their entire portion (which is borderline miracle status in our house), and I happily ate it for lunch the next two days. It was super flavorful, and amazing.
4. 4 Ingredient Pot Roast: I made this recipe for the first time around the holidays and it quickly became the third most popular recipe on my blog. It's sitting at 29,000+ page views right now, and with good reason. It's super easy, and amazingly flavorful. Who knew Coca Cola could make a roast taste so good.
