S'more Chocolate Chip Cookies

Every summer I feel like the internet comes out with 1,000 different s'more desserts. While I love marshmallow and chocolate as much as the next person, the crunchiness of the graham cracker is my least favorite part... meaning I don't really love 999 of the s'more dessert recipes that are on the internet. 


I saw this recipe for s'more chocolate chip cookies a few weeks ago, and was intrigued since they looked almost like a normal cookie, and not crunchy. I was home with just Kinsley over the weekend and wanted something fun to do, so we gave this recipe a try. 


I was a little nervous because the recipe called for these mini marshmallow bits, that are like the crunchy marshmallows you put in hot chocolate. I thought they would for sure make an unpleasant crunchy texture in the cookie, but too my surprise they totally softened, and turned out to be the perfect consistency. 

If you're looking for a new cookie to add to your arsenal to bring to a friend, to a dinner at someone's home, or to make on a Sunday night after dinner, these will totally fit the bill. 


Ingredients:
1/3 cup white sugar
1/2 cup brown sugar
1/2 cup butter, softened
1 egg
1 tsp vanilla
1 tsp baking soda
1/4 tsp salt
1 cup graham crackers (pulsed into flour texture in food processor)
1 1/4 cup all purpose flour
1 cup mini chocolate chips

Directions: 
Preheat the oven to 350º. In a large bowl using an electric mixer, cream together the sugar and the butter. When well combined, add the vanilla and the egg. Next add in all your dry ingredients (baking soda, salt, blended graham crackers, and flour), and beat until just combined. Then add in your marshmallow bits and chocolate chips. Beat until evenly distributed. 

On an ungreased cookie sheet, place heaping tablespoon size balls of dough on the pan, evenly spaced. Bake in the oven for 6-8 minutes (mine definitely took 8!). Let cool on pan for 2 minutes before transferring to a wire rack to cool (or wax paper lined counter top like I do!)
