Easy Thai Peanut Noodles

This Easy Thai Peanut Noodle recipe is the perfect weeknight meal when you need an easy dinner with lots of flavor. 

Our family loves eating Asian inspired dishes, but Thai food isn't something that we've dabbled into a whole lot. I remember a few years ago we made some "Thai Chicken Wings" that involved mixing peanut butter and salsa together, and they were literally awful. From that moment on, we didn't make much Thai food at home, ever.

I found this recipe for Thai Peanut Noodles a few weeks ago though, and while the sauce did have peanut butter in it, there was no salsa, and just a bunch of easy ingredients we already have in our pantry. I decided to give home Thai cooking another chance, and these Thai Peanut Noodles wound up being super delicious. 

We've made these Thai Peanut noodles three times now, and they're quickly becoming one of my new favorite repeat recipes to make. I love serving these with fresh green beans, and peanuts on the side for the kids. It's a quick and easy recipe that can literally be on the table in under 15 minutes. 

How to Make Easy Thai Peanut Noodles:

These Easy Thai Peanut Noodles come together with really easy ingredients. We start off by cooking a package of Udon noodles in one pot, while combining all the sauce ingredients together in another bowl. Once the Udon noodles are cooked, toss them in the peanut sauce, sprinkle peanuts on top, garnish with green onions, and your dinner is complete!

How to Make Thai Peanut Sauce:

Thai peanut sauce comes together with a few staple ingredients. For this sauce you'll simply mix together sesame oil, chicken broth, peanut butter, sriracha, honey, soy sauce, ginger, and garlic. Heat these ingredients together in a pot on the stove until warmed all the way through, and then toss with your prepared noodles.

What Noodles to use for Thai Peanut Noodles:

There are many different noodles you can use for Thai Peanut Noodles. We chose to use Udon noodles because they cook quickly in just 2-3 minutes. You could also use ramen, or in a pinch just use straight up spaghetti or fettuccini noodles!

This Easy Thai Peanut Noodle recipe is the perfect weeknight meal when you need an easy dinner with lots of flavor.

Ingredients

  • 16oz Udon Noodles
  • 1 tbsp Sesame Oil
  • 1/2 cup Chicken Broth
  • 3 tbsp Peanut Butter
  • 1 tsp Sriracha
  • 1 1/2 tsp Honey
  • 1 tbsp Soy Sauce
  • 1/2 tsp Ground Ginger
  • 3 Cloves Minced Garlic
  • Green Onions (garnish)
  • Raw Unsalted Peanuts (garnish)

Instructions

  1. In a medium size bowl, whisk together the chicken broth, peanut butter, sriracha, honey, soy sauce, ground ginger, and garlic.
  2. In a skillet over medium heat, add the sesame oil to the pan. Once it's heated up, add the udon noodles and sauce to the pan, and cover with a lid and allow to cook for 3-4 minutes.
  3. Once the sauce is heated through and the noodles are no longer sticking together and cooked through, removed from heat. Serve onto plates and top with peanuts and green onion as desired.
