Pumpkin Chocolate Chip Cookies

Pumpkin chocolate chip cookies are the best way to bring in that pumpkin flavor in the form of a light and fluffy cookie. The fall is my favorite season, and I love all things pumpkin pie spice, so I'm really excited to try lots of fun recipes this year.

If you're looking for a simple and delicious cookie recipe to make this year, then look no further because this is the only pumpkin chocolate chip cookie recipe that you're going to need.

1 cup canned pumpkin puree
1 cup white granulated sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semi sweet chocolate chips
1/2 cup chopped walnuts (optional)

In a large bowl, combine pumpkin, sugar, vegetable oil, and egg.

In a separate bowl whisk together flour, baking soda, ground cinnamon, and salt.

Dissolve the baking soda with the milk and stir in.

Add flour mixture to pumpkin mixture and mix well.

Add vanilla, chocolate chips and nuts.

Drop by spoonful on baking sheets with parchment paper or silicone baking mats. Set the oven to 350 degrees F (175 degrees C) for approximately 10 to 12 minutes or until lightly brown and firm.

Let cool on the baking sheet for a couple minutes before transferring to wire racks to cool.
