Vegan Dark Chocolate Quinoa Bowl

I have a huge sweet tooth in the morning. A typical morning for me would include a massive bowl of sugar cereal (I'm looking at you Fruit Pebbles), and then slather it in a bunch of milk. Probably not the best way to wake up your system right? I stumbled across this recipe for a Vegan Dark Chocolate Quinoa Bowl a couple weeks ago, and I was a little skeptical, but holy cow! It's like an adult acceptable version of Cocoa Pebbles. Even Kinsley was eating it right there with me. Kid approved, mom approved, plant based approved... what could be better?

Makes one serving
For the quinoa:
1/2 cup uncooked quinoa
1/2 cup unsweetened coconut milk
1/2 cup unsweetened almond milk
1 tbsp cocoa powder
1 1/2 tbsp pure maple syrup
1/4 tbsp vanilla extract
salt to taste

sliced banana
coconut sugar
chia seeds
chopped vegan dark chocolate (I used 80% dark)

Rinse the quinoa in a fine mesh strainer for two minutes. Heat a small saucepan over medium heat. Add the rinse drained quinoa and toast for 3 minutes on medium heat, stirring continually. Add almond milk, coconut milk, and salt.

Bring to a boil over high heat and then reduce the heat to low and cover with and let cook for 20 minutes. When quinoa is done cooking, add the cocoa powder, maple syrup, vanilla, and stir until well combined.

Finally, top with your toppings of choice. Mine are listed in the ingredients list above.
