After Derek graduated high school he served a two year mission for our church in Geneva, Switzerland and spent a large majority of his time in France. When we got married I naturally thought that I had to be a cool wife who cooked intricate French cuisine. While I may not have ever mastered Boeuf Bourguignon, I can whip up a pretty great crepe on the weekend. 

That being said, sometimes you want crepes but don't have all the ingredients, or you just need something that takes less time. You can actually make crepes from pancake mix with a few ingredients you likely always have on hand, and while they'll likely never be as good as the real thing, they do taste fabulous, and our kids had zero complaints when we made them this weekend.

What are Crepes?

Crepes are a very thin French style pancake that are made without rising agents (baking soda/powder). They come together with simple ingredients like eggs, flour, milk, salt, vanilla, etc... They differ from American pancakes in that you typically serve them with savory fillings, or sweet options like fruits, whipped cream, and of course, Nutella. 

How to Make Crepes from Pancake Mix:

To make crepes from pancake mix, the one thing you're definitely going to need is a pancake mix. Shocking, I know. You can use literally any kind of mix, we used the cheap generic brand and had no casualties. Aside from your mix you're going to need 2 cups of milk, one egg, and a splash of vanilla extract.

How to Cook Crepes:

Crepes cook in a pan on the stove, and that pan needs to be hot. We typically set our stovetop to 7, or whatever your halfway mark on your stove is between medium and the highest it goes. Once the pan is hot and up to temperature, melt butter in the pan, and pour in about two tablespoons of batter. Then you quickly turn the pan in a circle by rotating your wrist to let the batter coat the entire bottom of the pan in a thin layer. After about one minute, gently flip your crepe, let it cook for a few more seconds, and then remove it from the pan. Repeat this process for all of your bater!

Ingredients

How to Make Crepes from Pancake Mix
  • 1 cup pancake mix
  • 2 cups milk
  • 1 egg
  • 1 tsp vanilla

Instructions

  1. Mix all your ingredients together in a large bowl and set aside. 
  2. Heat a frying pan on the stove over medium high heat. Once the pan is hot, melt some butter in the pan. Once melted, add about two tablespoons of batter into the pan. 
  3. Rotate the pan by moving your wrist in a circular motion so that the batter coats the entire bottom of the pan in one thin later. 
  4. Cook the crepe for about 1-2 minutes, until you can gently flip it over, and let it cook on the other side for a few more seconds before removing from the pan. This process goes quickly so keep a close eye on it. 
  5. Once your crepes are cooked, serve with strawberries, bananas, whipped cream, and nutella, or whatever toppings you'd like!

Where's My Mummy: This is a book I recently found this year while scouring books for this post. It's the story of a sweet little mummy wanting one more game of "hide and shriek" before bed! This book is probably the most adorable of them all!

Click Clack Boo: This is the Halloween tale of one of our all time favorites, Click Clack Moo. When I found out this book existed, I knew it was definitely going to be on the top of this list!

Room On The Broom: A witch is going for a ride on her broom when she loses her hat and other things too. Luckily their are some cute forest animals to help her find her things in exchange for a ride on her broom!

Joey the Jack-o-Lantern: Last week I texted my mom and said, "What was that Halloween book we had about a Jack-o-Lantern?" totally vague and not descriptive at all, but my mom totally knew which one I was talking about! This is a super fun story about a Jack-o-Lantern who wants to be scary but doesn't think his face fits the bill until he gets a little help on Halloween night!

The Night Before Halloween: We're ridiculously big fans of every book Natasha Wing has written in this series and this one is no different! "Twas the night before Halloween when all through the house, all the creatures were stirring except for the mouse!" I really love this series!

Clifford's Halloween: This is a nostalgic one for me because I'm pretty sure my mom had every holiday Clifford book and this one definitely made it's way to our family coffee table each fall. I'm excited to be able to share this one with my kids this year!

Arthur's Halloween: Like the Clifford books, I'm pretty sure my mom had all the Arthur ones too! I think my favorite part about this book is that they go into a creepy old lady's house and get some donuts because.... donuts.

The Berenstain Bears Trick or Treat: Upon researching books for this post I realized that there were approximately a million different Halloween Berenstain Bears books, but this is the one  I remembered most about brother and sister bear going trick-or-treating on their own for the first time. 

The 12 Days Of Halloween: A fun spoof off of the 12 Days of Christmas, made just for your little ghost or goblin that you have in your home. 

How to Catch a Monster: Everything you and your kids will ever need to know about monsters and how to catch them. The perfect resource for all the spooky scenes we're sure to see as Halloween approaches. 

Vampirina Ballerina: We added this to our collection a few years ago and love it. A vampire who wants to be a ballerina but has a lot of obstacles to get her there. She can't see herself in the mirror, has to find a class at night... find out how she makes her ballerina dreams a reality.

At The Old Haunted House: We added this book to our collection a few years ago and it's a really fun read. It takes you through the various rooms of a haunted house before dropping you off at the ultimate Halloween bash!

The Littlest Mummy: All Mae wants to do is boogie with her family at the Halloween bash, but everyone keeps telling her she's too little. Will she overcome her challenges and party with her family? You'll have to crack this one open to find out. 

The Little Old Lady Who Was Not Afraid of Anything: This book wams gifted to us at some point and is a super fun read about a little old lady who goes on a spooky walk home. She claims she's not afraid of anything until...

Dragon's Halloween: This was a book I loved growing up. It's a collection of short stories about a dragon and his Halloween adventures. It would be fun to break it up and read one short story before bed each night, or let your child plow through the entire thing in an afternoon. 

Pinkalicious: Pink or Treat: Kinsley is mega obsessed with Pinkalicious right now, so this Pink or Treat Halloween story has been a welcomed addition to our home library. When the mayor cancels Halloween because of a power outage, Pinkalicious saves the day. 

I Spy Halloween: Because every kid loves a good I spy book right?

DIY Halloween Popcorn Party Favors

DIY Halloween Popcorn Party Favors are a quick and easy Halloween treat to put together for any family or class Halloween Party.

With Halloween right around the corner I'm getting excited for all the family parties, dinners, decor, and festivities that are ahead of us. Halloween is one of my very favorite holidays and I love celebrating it with my kids each year. Derek's family hosts a Halloween party each year for the nieces and nephews and it's something that we're looking forward to doing again this year. 


I made these Halloween Popcorn Party favors a few years ago, and I think that they would be the perfect Halloween party favor for any festivity that you're participating in this year. They can easily be adapted with seal snack size bags of popcorn for a class party, or you can fill your own snack size baggie with some popcorn and make yours how I did below! 

What You Need to Make Halloween Popcorn Party Favors

These Halloween Popcorn Party Favors are super easy to make! All you need is some popcorn, snack sized ziplock bags, construction paper or cardstock, and some spooky Halloween stickers to make this easy craft come to life. If you can't find stickers you could even cut out black construction paper into the shape of bats.

You'll also need some simple items from your home such as a pencil, ruler, scissors, and a stapler to put the finishing touches on your popcorn party favors.

How to Make Halloween Popcorn Party Favors:

To make these the halloween popcorn party favors the first thing you're going to do is trace your snack size sandwich bag out onto a piece of paper. This should give you a square/rectangle shape the exact size as your sandwich bag. 

Then you're going to cut out that square and fold it in half. Once your paper is folded in half you can then stick your bat stickers (or any Halloween stickers of your choice), or your bats that you drew and cut out, onto the center of your folded piece of paper. 

Once you have your bat on your paper you're going to stick the side of your baggie with the ziplock opening inside the folded portion of your paper so that the ziplock is covered. From there you staple the piece of paper in place to make a super cute and easy halloween popcorn party favor for your next family gathering or school party! Repeat this process as necessary until you have all the bags you need.

Supplies:

Halloween Colored Construction Paper or Card Stock (purple, green, orange, etc...)
6 Snack Size Sealable Baggies
Ruler
Scissors 
Pencil
Stapler
Bat Stickers or Cut Out Your Own Bats

Directions:

  1. Trace a snack size sandwich baggie onto a piece of card stock
  2. Cut out your shape and then fold it in half. 
  3. Stick your bat stickers onto the middle of your folded paper, or tape/staple your drawn bat onto your folded paper. 
  4. Stick the opening side of your resealable bag into the folded part of your paper and then staple your bat paper onto your bag. 
  5. Repeat as necessary until all of your popcorn bags are completed!

I remember when I first moved to Utah for college in 2010, one of my roommates invited a bunch of people over one Sunday for "no bake cookies". I was super confused by the concept and imagined her mixing together some raw cookie dough and serving it to people. What are No Bake Chocolate Peanut Butter Oatmeal Cookies?

No Bake Chocolate Peanut Butter Oatmeal Cookies are essentially cookies that are made in a pot on the stove. The cookies consist of a few pantry staples that most people already have on hand. They come together with butter, sugar, milk, cocoa powder, oats, peanut butter, and vanilla.  To make the best no bake cookies you'll want to make sure that you're using real butter and not margarine. You'll also want to make sure that you're making them with quick cooking oats and not old fashioned (although I have made them with old fashioned in a pinch). The quick cooking oats get a little softer than the old fashioned oats and make for an overall better texture for your cookie.

How to Make No Bake Chocolate Peanut Butter Oatmeal Cookies: 

To make No Bake Chocolate Peanut Butter Oatmeal Cookies you'll need to combine your butter, sugar, cocoa powder, and milk together in a pot on the stove. Let the mixture boil on the stove for one minute, then remove it from the heat. You'll then stir in your remaining ingredients. From there you'll scoop your mixture out into cookie size drops on some parchment paper and set them aside for 10-15 minutes to set and firm up. Once they're firm enough to pickup without breaking, they're ready to serve. See below for more detailed instructions.

No Bake Chocolate Peanut Butter Oatmeal Cookies are the perfect treat to make out of pantry staples when you need something sweet to snack on.

Ingredients:

  • 1/2 cup Butter
  • 2 cups Sugar
  • 1/2 cup Milk
  • 4 tbsp Cocoa Powder
  • 1/2 cup Peanut Butter
  • 3- 3 1/2 cups Quick Cooking Oats
  • 2 tsp Vanilla

Instructions:

  1. Combine your butter, sugar, milk, and cocoa powder into a saucepan on medium high heat. Bring the mixture to a rolling boil and then let it boil for one minute. 
  2. After one minute remove the saucepan from the heat and stir in the peanut butter, oats, and vanilla. 
  3. Using a cookie scoop, scoop the mixture out onto wax or parchment paper and let cool until set. You can speed up this process by letting the cookies cool in the fridge.

Raddish Kids is great for children ages 4-14. Younger kids can learn to cook and help along side their parents while older kids can take the lead and be more hands on. Kyle is 8-years-old so I let him take the lead on cutting all the vegetables, cracking all the eggs, and stirring things together, and basically everything that didn't involve him using the stove (building up to that one!) 

Raddish Kids is also great for children who need more help working on fine motor skills. While the kit we got was meant for Kyle, after using and preparing one of the recipes I can see how this would be really beneficial for children with disabilities like Kinsley. I've been making many different variations of this super easy fudge recipe for years now. Back in 2012 I shared a White Chocolate and Peppermint Fudge recipe, and then I shared this Super Easy Reese's Fudge recipe back in 2013. I've been making some variation of this recipe for the last eight years because the recipe is so easy to make and only takes a couple of minutes.

Last week I found myself craving some chocolate, and when I found all the ingredients in our pantry to make this Super Easy Rocky Road Fudge, I knew I needed to give it a go! It turned out perfect, and will definitely be a repeat recipe in our home!

What You Need To Make Super Easy Rocky Road Fudge:  

The base for this fudge recipe starts off the same as the other fudge recipes that I've shared on my blog. You need one 12oz bag of chocolate chips, and one can of sweetened condensed milk. It's seriously that easy. You can use any chocolate you like too. Milk, semi-sweet, white, etc... I've tried them all and they all work perfectly. For this Super Easy Rocky Road Fudge recipe though, I went with milk chocolate chips. For the mix-ins I used 3 cups of mini marshmallows, and 1 cup of chopped peanuts.

How To Make Super Easy Rocky Road Fudge: 

Once you have all your ingredients together, making Rocky Road Fudge is super easy. In a medium size pot on the stove over medium heat you're going to throw in your twelve ounces of chocolate chips and your can of sweetened condensed milk. Stir them together until everything is melted and combined. Then remove your pan from the heat and stir in your mix-in ingredients (peanuts and marshmallows), and then pour in a pan and chill in the fridge until your Rocky Road Fudge has hardened. Super Easy Rocky Road Fudge

Super easy rocky road fudge is the perfect recipe to make when you need an easy no bake fudge recipe for any occasion.

Ingredients:

  • 1 12oz bag chocolate chips
  • 1 10oz can sweetened condensed milk
  • 1 cup chopped peanuts
  • 3 cups mini marshmallows

Instructions:

  1. Start by lining an 8x8 baking dish with tin foil and spray with nonstick cooking spray.
  2. In a pot over medium heat mix together the chocolate chips and sweetened condensed milk. Stir continually to make sure none of the chocolate burns at the bottom. 
  3. When the chocolate chips and sweetened condensed milk are evenly melted together remove from heat and stir in your peanuts and marshmallows. 
  4. Using a rubber spatula spread the mixture into your prepared pan evenly and chill in the fridge for 2-4 hours until chilled and set. 
  5. Cut evenly into squares and enjoy!

Cleaning is one of my favorite past times. I know that sounds weird, but I get great satisfaction out of cleaning my home from top to bottom on a Saturday afternoon. I would claim to be more of a master tidier than deep cleaner though. There are parts of my house like the baseboards, blinds, appliances etc... that only get cleaned once a year when we're typically moving out of one home and into another. 

Because we swear and promise that this house we just bought is our final last move ever, I figured now would be a great time to get into a good "deep cleaning routine", where I pick one part of the home each week to give a little extra care and detail to so that these once-a-year duties become a more regular part of my life.

While we do rinse out the sink each time we load the dish washer, I've been trying to get in the habit of doing a deep clean and scrubbing it down a couple times a month so it doesn't get out of hand. How To Deep Clean Your Kitchen Sink: 

The first thing you need to do to clean your kitchen sink goes without saying: take out all of the dishes (either wash them or load the dishwasher). The next thing I like to do is give the sink a quick rinse just to wet the surface. 

Then I take my Palmolive®​ Ultra Oxy and pour just a little bit into the sink (a little goes a long way). Next I take my Scotch-Brite® Advanced Scrubber and lightly scrub the sink using a circular motion all the way around.

Usually at this point I'll let it sit for a minute or two while I spray down and wipe the counter tops or clean something else. When I'm ready to come back to it I spray away all the soap and rinse the sink completely. 

Finally I take a dish towel and buff the sink dry. This gives it the best shine and seriously makes your sink look like it's brand new again.
