Recipe for Shrimp Scampi

This Recipe for Shrimp Scampi is the perfect weeknight dinner. It comes together in 15 minutes and it's a meal you can count on your kids eating without complaint.

We have been making this recipe for shrimp scampi for about eight years now, making it a long time family favorite in our home. I love that it can be made in 15 minutes, and that my kids eat it with minimal complaints. There is also the benefit that anything that has shrimp in it is usually really well received. If you're in the market for a recipe for shrimp scampi, this one will quickly become a family favorite in your home too.

Recipe for Shrimp Scampi

This recipe comes together by boiling angel hair pasta in a pot on the stove. While that is boiling throw your frozen shrimp in a pan on high heat covered with the lid and let the shrimp thaw and heat all the way through. When the shrimp is an even temperature throughout, toss in all your remaining ingredients. Drain the pasta once cooked, toss with the shrimp and sauce, and you have the easiest shrimp scampi ever.

What Kind of Shrimp for Shrimp Scampi?

I personally like to use the shrimp that is frozen, precooked, peeled, and deveined. It makes weeknight cooking so much easier! You certainly can use fresh shrimp, or any shrimp you'd like, but I find the frozen, peeled, and deveined works best for our family!

Storing Leftover Shrimp Scampi

Shrimp scampi is not a dish that lasts very long after it's cooked. If sealed in an airtight container in the fridge, you could eat it up to two days later, but I wouldn't go any longer than that. You could freeze the sauce and shrimp in the freezer for several months if saved separately from the pasta.

These meals are simple, easy, and flavorful. They turn out perfect every time, making them the best meals to take a friend after they've had a baby, surgery, or a bad day.

I love being able to bring someone a meal after they have brought a new baby into the world, had a surgery, or just a plain bad day. I know we've been the recipient of many kind and wonderful meals over the years, and they're something that fills me with so much gratitude.

When taking a meal to a friend, it can feel super stressful coming up with a recipe everyone will like. Or something that's easy to make, tastes good, and turns out every time so there is no second guessing the cooking process. If you're looking for the best meals to take to a friend, these should steer you in the right direction.

Rules for Bringing Dinner to a Friend:

There really aren't any major rules, but try sticking to normal basic foods and don't get too exotic with anything. Always try to give the food in dishes that you don't want back so that your friend doesn't have to worry about containers or labeling dishes to give back to the right people. Be up front with them and tell them you don't want the container back so they can either keep it or throw it away without guilt.

15 Best Meals to Take to a Friend:

15 best meals to bring a friend
5 Ingredient Lasagna: This recipe is a classic go-to in our home. It only takes 5 ingredients, you don't need to boil the noodles ahead of time, and it tastes simple and amazing. Bring it to someone in a foil container, add a bag of salad, and a loaf of bread from the bakery section at the store for a side, and you've got a simple and delicious meal!

15 best meals to bring a friend
10 Minute Weeknight Stir Fry: This dish is perfect because you have carbs, veggies, and everything in one dish. Simply pack it up in one container and you're good to go. I made mine vegetarian in this recipe, but you could add chicken or beef to add some bulk to the meal!

15 best meals to bring a friend
Beef Vegetable Soup: This is one of my all time favorite soup recipes. It's another perfect one dish meal to bring to someone, but you could also add a loaf of bread from the bakery section at the store as well.

Our Favorite Butter Chicken Recipe: We do not eat Indian food on a regular basis, but we do LOVE this chicken dish. The sauce is easy to make with pantry staple ingredients and it tastes amazing every time! 15 best meals to bring a friend
Four Ingredient Pot Roast: If you need to bring someone a larger meal, or a nice Sunday dinner, this roast is a family favorite in our house. The roast cooks in the slow cooker all day with the carrots and potatoes. When you need to bring it to your friend, transfer everything to a foil baking dish, cover it up, and you're good to go!

15 best meals to bring a friend
Ham and Brown Rice Casserole: This is such an easy meal to throw together and is perfect if you're feeding a family that has small kids. My kids loved this when they were toddlers and it was a meal I could make in about 15 minutes. To bring this to a friend simply package it up in one container and you're good to go!

15 best meals to bring a friend
Sloppy Joes: Is there anyone who doesn't love Sloppy Joes? This is another great meal to bring to a family. After you cook the meat, transfer it to a container, and then give your friend a bag of buns, and another container of chopped bell peppers or cucumbers as a side and the meal is complete!

(Enchiladas will be best baked in a foil baking dish when giving to a friend).

15 best meals to bring a friend
Orzo Salad with Artichokes and Sausage: This is probably the most wild meal on the list but it is so delicious. It's full of flavor, the artichokes add a great texture and flavor without being harsh, and it's just good comfort food. This can stand alone as a one pot dish, but you could also give a bag of frozen broccoli to go along with the meal.

15 best meals to bring a friend
Toddler Friendly Chili: This is a go to meal in our house. It can be made in about 20 minutes, isn't super spicy, but full of flavor that the entire family will love from the littlest of eaters all the way up to the adults. Serve with a side of cornbread and you have a quick and easy meal!

15 best meals to bring a friend

Vegetable Fried Rice: You could totally add chicken to this to give it more bulk, but this is another great vegan option for friends who are plant based. I actually remember someone giving us chicken fried rice after we had Kyle and it was one of my favorite meals someone had given us.

How to Make Crepes From Pancake Mix

Crepes are a super fun french breakfast to make on the weekends. If you're running low on time and ingredients you can make crepes from pancake mix to make them even easier.

After Derek graduated high school he served a two year mission for our church in Geneva, Switzerland and spent a large majority of his time in France. When we got married I naturally thought that I had to be a cool wife who cooked intricate French cuisine. While I may not have ever mastered Boeuf Bourguignon, I can whip up a pretty great crepe on the weekend.

That being said, sometimes you want crepes but don't have all the ingredients, or you just need something that takes less time. You can actually make crepes from pancake mix with a few ingredients you likely always have on hand, and while they'll likely never be as good as the real thing, they do taste fabulous, and our kids had zero complaints when we made them this weekend.

What are Crepes?

Crepes are a very thin French style pancake that are made without rising agents (baking soda/powder). They come together with simple ingredients like eggs, flour, milk, salt, vanilla, etc... They differ from American pancakes in that you typically serve them with savory fillings, or sweet options like fruits, whipped cream, and of course, Nutella.

How to Make Crepes from Pancake Mix:

To make crepes from pancake mix, the one thing you're definitely going to need is a pancake mix. Shocking, I know. You can use literally any kind of mix, we used the cheap generic brand and had no casualties. Aside from your mix you're going to need 2 cups of milk, one egg, and a splash of vanilla extract.

How to Cook Crepes:

Crepes cook in a pan on the stove, and that pan needs to be hot. We typically set our stovetop to 7, or whatever your halfway mark on your stove is between medium and the highest it goes. Once the pan is hot and up to temperature, melt butter in the pan, and pour in about two tablespoons of batter. Then you quickly turn the pan in a circle by rotating your wrist to let the batter coat the entire bottom of the pan in a thin layer. After about one minute, gently flip your crepe, let it cook for a few more seconds, and then remove it from the pan. Repeat this process for all of your bater!

I remember when I first moved to Utah for college in 2010, one of my roommates invited a bunch of people over one Sunday for "no bake cookies". I was super confused by the concept and imagined her mixing together some raw cookie dough and serving it to people. While that is something I would fully support, I was almost positive that wasn't what she was making. It turns out "no bake" does not equal "no cook". No Bake Chocolate Peanut Butter Oatmeal Cookies turned out to be a hit ten years ago in college and are still a hit in our home today.

What are No Bake Chocolate Peanut Butter Oatmeal Cookies?

No Bake Chocolate Peanut Butter Oatmeal Cookies are essentially cookies that are made in a pot on the stove. The cookies consist of a few pantry staples that most people already have on hand. They come together with butter, sugar, milk, cocoa powder, oats, peanut butter, and vanilla.  To make the best no bake cookies you'll want to make sure that you're using real butter and not margarine. You'll also want to make sure that you're making them with quick cooking oats and not old fashioned (although I have made them with old fashioned in a pinch). The quick cooking oats get a little softer than the old fashioned oats and make for an overall better texture for your cookie.

How to Make No Bake Chocolate Peanut Butter Oatmeal Cookies:

To make No Bake Chocolate Peanut Butter Oatmeal Cookies you'll need to combine your butter, sugar, cocoa powder, and milk together in a pot on the stove. Let the mixture boil on the stove for one minute, then remove it from the heat. You'll then stir in your remaining ingredients. From there you'll scoop your mixture out into cookie size drops on some parchment paper and set them aside for 10-15 minutes to set and firm up. Once they're firm enough to pickup without breaking, they're ready to serve. See below for more detailed instructions.

With Kyle doing homeschool this year, I knew that it was going to be my responsibility to to provide any fun activities that he might participate in outside of our typical school books. Coming up with creative things on my own is not necessarily my strong suit, so awesome subscription boxes like Raddish Kids that deliver the fun and education right to my door are something I'll support 100%.

What is Raddish Kids?

Raddish Kids is a monthly subscription service that delivers a kit straight to your home for your child/children to learn beginner cooking skills, and other skills such as reading recipes, shopping for ingredients, and so much more.

Each box comes with a cooking utensil for your child to add to their personal collection, a collectible badge that corresponds with each monthly theme, three recipes, and activities that build off of the monthly themes. Our kit that we were sent was "American Diner" themed and came with little conversation starter cards to use at the dinner table, a notepad to take orders with, and a whisk!

Who is Raddish Kids Good for?

Raddish Kids is great for children ages 4-14. Younger kids can learn to cook and help along side their parents while older kids can take the lead and be more hands on. Kyle is 8-years-old so I let him take the lead on cutting all the vegetables, cracking all the eggs, and stirring things together, and basically everything that didn't involve him using the stove (building up to that one!)

Raddish Kids is also great for children who need more help working on fine motor skills. While the kit we got was meant for Kyle, after using and preparing one of the recipes I can see how this would be really beneficial for children with disabilities like Kinsley. She could totally work alongside me in the kitchen whisking eggs, pouring ingredients, and I could even help her hand over hand to cut and chop ingredients. The entire process would be so great to help her work on her hand strength and other occupational therapy goals.

At the time of writing this there is currently a $15 off coupon code when you purchase a six month subscription. Use promo code HARVEST at checkout to take advantage of this offer!

Have you tried Raddish Kids yet? It is serisouly such a fun service, and it's something I'm really excited about rotating into our homeschool schedule with Kyle each month!

For this Super Easy Rocky Road Fudge recipe though, I went with milk chocolate chips. For the mix-ins I used 3 cups of mini marshmallows, and 1 cup of chopped peanuts.
