Spicy Green Beans

It's almost a nightly struggle with whether or not Derek is going to eat his vegetables. Yes, Derek my husband, not Jay my 7 month old. Good thing I love him right? So I've been trying to figure out new ways to cook them so that they might become more appealing. When I made these a few nights ago, Derek ate all that was on his plate and said, "not bad", but of course didn't dare for seconds. 

Ingredients:
1 pound green beans
1 tsp red pepper flakes
1/2 tsp salt
pinch of pepper
a drizzle of oil

Directions:
Preheat the oven to 425°. Toss beans, oil, red pepper, salt and pepper in a bowl until well coated. Spread out on a cookie sheet and bake for 15 minutes, stirring half way! Then enjoy your tasty veggies!
