Derek's Nachos

Whenever food actually looks pretty and is yummy around here, chances are, Derek made it. I'm not really good at making food look delicious once it's cooked. Derek's really good at the presentation. Today we were going to have taco salad for dinner but decided that turning it into nachos was a lot more fun! I found a recipe to make our own taco seasoning which I made last week and we finally got to try it tonight and I'm fully converted, we're never going back to the store bought stuff! 


Ingredients:
Tortilla chips
1/2lb ground beef, browned
Taco Seasoning (half packet or half of this recipe
3/4 cup cheddar cheese, shredded
1/2 cup black olives, sliced
1 tomato, diced
1 handfull chopped cilantro
1 handfull shredded lettuce
Sour Cream and Salsa to taste 

Directions:
Preheat oven to 400°. Brown the meat and then sprinkle with taco seasoning and mix well. On an ungreased cookie sheet put about 4 handfuls of tortilla chips or until it looks right. Sprinkle meat on top of chips. Sprinkle cheese, cilantro and black olives on top of meat. Cook in oven until cheese is melted, about 3-4 minutes. Remove from oven and top with lettuce, tomatoes, salsa, and sour cream!
