Smothered Burritos

I really don't know what the difference between a smothered burrito and an enchilada is... but the recipe that provided the inspiration for this meal called them smothered burritos, so there you have it! We had these Thursday night for dinner, and Derek, Jay, and myself all found them to be perfectly delicious! 


Ingredients: 
1/2lb ground beef
1/2 onion chopped
1 14oz can enchilada sauce
1/2 taco seasoning packet, or make your own like we did
1 can refried beans
1 cup shredded cheddar
Tortillas 
Mexican rice (I used store bought)
salsa and sour cream for toppings

Directions:
Brown the meat and onions together. Add the taco seasoning and half of the enchilada sauce and simmer for 10 minutes until sauce reduces. In a small sauce pan mix the beans and 1/2 cup cheese together and prepare Mexican rice according to the package directions. Spoon some meat, rice, and beans in each tortilla and then roll up and place on a greased cookie sheet. We got 5 burritos and then had rice and beans left for another night. Turn the broiler on in your oven. Pour the rest of the enchilada sauce over the tops of the burritos and sprinkle with the rest of the cheese. Bake in the oven just until the cheese is melted. About 3-5 minutes.
