Light Lime-Garlic Shrimp

I love ending a weekend with a tasty Sunday dinner. This week I decided to take all my dinner ideas from the Healthy College Cookbook that I got when I left for Utah for college. I like the recipes in here because they're healthy, and the servings are the perfect size for this family of three and we don't wind up with a ton of leftovers which is nice since they go to waste more often then not. 

Tonight we tried this yummy shrimp recipe since shrimp is the only fish that Derek will eat. It was really yummy, and easy to put together. A recipe that only takes 7 minutes to cook is a go in my book! We served this with green beans, cooked in the oven right with the shrimp, and a side of cilantro lime rice. Deliciousness at it's finest. 


Ingredients:
2 tbsp lime juice
1 tbsp hot sauce
2 garlic cloves, thinly sliced
1/2 tsp salt
1 12oz package frozen shrimp (already cooked and deveined)

Directions:
Preheat oven to 350° Let the shrimp thaw out and remove the shells from them. Mix the lime juice, hot sauce, garlic, and salt together. Mix with the shrimp. Cover a 9x13in pan with foil and then put shrimp, (and green beans if you're going to have them), in the dish, and then fold the foil over the top of the shrimp and bake for 7-10 minutes. Serve with a side of yummy rice!
