Derek and I were leaving town last weekend and I didn't want the meat we had in our fridge to go to waste, so I decided to make this oven baked meatball recipe. When I was done making them, I popped them into the freezer, and when we get back from our trip, we can just pop them in the slow cooker with some marinara sauce.
This is a super easy meatball recipe. It's gluten free, and doesn't involve any bread crumbs. They're also low in saturated fat since we're using lean meat... which means we can just eat more ice cream after dinner. There really is nothing like a good home cooked meal, and these are just so good.
Ingredients:
1 meatloaf seasoning packet
1 cup parmesan cheese
1 lb lean ground beef (you could also use ground turkey, ground chicken, or any lean meat)
Directions:
Preheat oven to 375°
Lightly grease a baking sheet with olive oil
In a large bowl combine all of the above ingredients.
Place 1 inch balls on cookie sheet
Bake meatballs for 20 minutes
