Salsa Chicken

I made this dish a few months ago but then never posted it or anything. I made it again last night for dinner and decided that it was the perfect time for its blogging debut. The original recipe for this was from Sweet Pea's Kitchen. If you haven't checked out that blog you definitely should! It's absolutely wonderful! Anyways I've made some modifications since the original recipe that Sweet Pea posted to better fit what Derek and I like. 
Ingredients:
1 large chicken breast cut in half
2 tbsp water
1 tbsp + 1 tsp taco seasoning
3/4 cup cheddar cheese
1 cup salsa

Directions
  • Preheat oven to 400
  • Mix taco seasoning, water, & chicken in zip lock bag and let marinate in the fridge for 30 mins
  • Lightly grease a small pan and then coat the bottom with a small layer of salsa
  • Place the chicken in the pan and sprinkle with more seasoning if desired
  • Spread remaining salsa on top of chicken
  • Bake for 25-30 mins
  • Take out of oven and sprinkle cheese over top
  • Continue cooking for 2-3 minutes until cheese is well melted
  • Take out of oven and ENJOY
