I remember when I first moved to Utah for college in 2010, one of my roommates invited a bunch of people over one Sunday for "no bake cookies". I was super confused by the concept and imagined her mixing together some raw cookie dough and serving it to people. While that is something I would fully support, I was almost positive that wasn't what she was making. What are No Bake Chocolate Peanut Butter Oatmeal Cookies?

No Bake Chocolate Peanut Butter Oatmeal Cookies are essentially cookies that are made in a pot on the stove. The cookies consist of a few pantry staples that most people already have on hand. They come together with butter, sugar, milk, cocoa powder, oats, peanut butter, and vanilla.  To make the best no bake cookies you'll want to make sure that you're using real butter and not margarine. You'll also want to make sure that you're making them with quick cooking oats and not old fashioned (although I have made them with old fashioned in a pinch). The quick cooking oats get a little softer than the old fashioned oats and make for an overall better texture for your cookie.

How to Make No Bake Chocolate Peanut Butter Oatmeal Cookies: 

To make No Bake Chocolate Peanut Butter Oatmeal Cookies you'll need to combine your butter, sugar, cocoa powder, and milk together in a pot on the stove. Let the mixture boil on the stove for one minute, then remove it from the heat. You'll then stir in your remaining ingredients. From there you'll scoop your mixture out into cookie size drops on some parchment paper and set them aside for 10-15 minutes to set and firm up. Once they're firm enough to pickup without breaking, they're ready to serve. See below for more detailed instructions.

No Bake Chocolate Peanut Butter Oatmeal Cookies are the perfect treat to make out of pantry staples when you need something sweet to snack on.

Ingredients:

  • 1/2 cup Butter
  • 2 cups Sugar
  • 1/2 cup Milk
  • 4 tbsp Cocoa Powder
  • 1/2 cup Peanut Butter
  • 3- 3 1/2 cups Quick Cooking Oats
  • 2 tsp Vanilla

Instructions:

  1. Combine your butter, sugar, milk, and cocoa powder into a saucepan on medium high heat. Bring the mixture to a rolling boil and then let it boil for one minute. 
  2. After one minute remove the saucepan from the heat and stir in the peanut butter, oats, and vanilla. 
  3. Using a cookie scoop, scoop the mixture out onto wax or parchment paper and let cool until set. You can speed up this process by letting the cookies cool in the fridge.

    1. For this recipe to turn out correctly, yes. But you likely could substitute with a nut butter of your choice.
