Smothered Beef Burritos

Last night before I left for class I was watching the news with Derek on KUTV 2 on the "What's For Dinner" section and I saw this recipe and it looked amazing and it was all I could think about since I saw it so clearly, I had to make it for dinner tonight. I had two taste testers and they both approved (Derek and his broski (yes I said broski), Nathan)! So here is the recipe, so I can pass along deliciousness from me to you!

Ingredients:
2 cups chicken stock
3 Serrano peppers, seeds removed (adjust to your liking)
1 cup sour cream
1 cup mushrooms
1/4 cup tomato paste
1 tbsp chili powder
1 tsp cumin
2 tsp garlic powder
2 tsp onion powder
1 cup cilantro
2 tbsp flour
1 pound ground hamburger
2 cups black beans
2 cups cooked rice
flour tortillas
salt and pepper to taste

Garnish:
Shredded lettuce
diced tomatoes
diced onion
sour cream
cilantro
shredded cheese

Directions:
1. In a blender, combine the chicken stock, serrano peppers, sour cream, mushrooms, tomato paste, chili powder, onion powder, cilantro and flour.  Process until smooth.  Transfer to a sauce pan and bring to a boil, reduce heat and simmer for 5 minutes.
2. Cook the hamburger until fully cooked.  Salt and pepper to taste and add the black beans and cooked rice to the cooked hamburger.  Stir to blend.  If wanted add 1 tsp each garlic powder, cumin, onion powder to the cooked hamburger mixture and stir to incorporate.
3. To make your burrito, warm the tortilla and spoon a generous portion of the hamburger mixture down the center of the tortilla.  Roll the tortilla up and ladle some of the hot sauce over the burrito.  Top with shredded cheese, lettuce, tomatoes, onions, sour cream and cilantro.  Enjoy!
