Quiche with Tomatoes, Onion, Basil, and Cheese

Since Derek spent 2 years of his life serving a mission for our church in France, every once in a while I like to be a good wife and try to make some French food, just to make him happy and so he can reminisce about how awesome his mission was! He said that this quiche was awesome, although it could have used some bacon. Really? Has bacon really taken over every meal?! This recipe was really simple and delicious!

Ingredients: 
1 tbsp oil
1 red onion, sliced
2 roma tomatoes, peeled and sliced
2 tbsp flour
3 large eggs beaten
1/2 cup milk
1 tbsp dried basil
1-9in deep dish pie crust, unbaked (I used store bought!)
1 1/2 cup Colby Jack cheese, shredded 
Salt and pepper to taste

Directions:
Preheat oven to 400°

Bake pie shell in preheated oven for 8 minutes, then remove

Heat oil in large skillet over medium heat

Saute onion until soft, remove from skillet, set aside

Sprinkle tomato slices with flour and basil and then saute on each side for one minute

In a small bowl whisk together milk and eggs; season with salt and pepper

Spread one cup cheese on the bottom of crust

Layer onions over cheese and then layer tomatoes over onions

Cover with egg mixture

Sprinkle top with remaining 1/2 cup of cheese

Bake for 10 minutes

Reduce heat to 350° and then bake for another 15-20 minutes or until eggs are cooked all the way through and pie shell is golden brown

Serve warm and enjoy!
