Pumpkin Spice Muffins

As I sit here procrastinating another night of homework, I thought it would be my duty to show you the tasty muffins that yesterday's procrastination of Pumpkin Pie Spice DIY, was able to produce. I loved how simple this recipe was and how delicious they turned out. Even Derek who fears the fall because of my need to bake everything pumpkin, said that the muffins were good, so that means something, right? These muffins look like Plain Jane's but they are very flavorful!



Ingredients: 
3 cups flour
2 tbsp + 2 tsp pumpkin pie spice (make your own here)
2 tsp baking soda
1 1/2 tsp salt
3 cups sugar
1 14oz can pumpkin
4 eggs
1/2 cup oil
1/2 cup orange juice or water (I did water, orange juice would probably be divine)

Directions:
Preheat oven to 350°. Mix together in a large bowl, flour, pumpkin pie spice, baking soda, and salt. In the bowl of your mixer, beat together sugar, pumpkin, eggs, oil, and water until well mixed. Then pour the flour mixture into the wet mixture and mix until just combined, don't over mix. Bake for 25-30 minutes.
