Ham and Brown Rice Casserole

A quick thanks to everyone in regards to yesterday's post. I'm glad that it came across as a positive thing, and I'm truly grateful for everyone's support! Sorry I got a little crazy and materialistic for a while... Here's to turning new leafs and eating yummy food... Like this casserole!

We had this for Sunday dinner a couple weeks ago and it was a big success among the family. Although Derek will tell you that there were way too many peas... there was the perfect amount once he got done digging some of them out. And Jay went back for thirds which was refreshing since he went on a three day streak of barely eating anything I made. Maybe I shouldn't measure my happiness by the amount in which my two year old eats, but some days are a struggle with him and eating, so I rejoice in the small victories over here. Plus this is a meal you can feel good about since it's brown rice, and then a protein and a veggie all in one!


Ingredients:
1 14oz can chicken broth
2 1/2 cups ham, diced (I buy a couple fully cooked ham steaks at the store for this)
1 small clove garlic, minced
1 1/2 cups instant brown rice
1/2 tsp pepper
2 cups frozen peas

Directions:
In a skillet, mix broth, ham and garlic. Bring to a boil over medium high heat. Stir in rice, then season with pepper. Reduce heat to low and cover; simmer for 10 minutes. 

Stir in peas, cook until rice is tender and peas are hot, about 7 minutes longer. Serve immediately.

  1. Looks yummy! I wish I could do the rice. Don't worry, my toddler goes through days where she barely eats a thing and I'm sitting here, about to lose my mind as my dog is eating everything she was offered but threw on the floor! And then a few days later, she will eat like an elephant! But I know the feeling! I'm convinced that my toddler and all my future toddlers very well may be the death of my sanity!!
