Sloppy Joe Baked Potatoes

A few weeks ago I had signed up to feed the missionaries and then Derek wound up having to work late, and so we canceled on them. The next Sunday we signed up to feed them again for the following week, but then we had a new missionary serving in our local church congregation and he was gluten free. I've never had to worry about cooking for dietary restrictions before, so the two weeks leading up to us feeding the missionaries I was freaking out that I was going to kill one of them. 


I started sifting through some blogs trying to come up with something good to make that wouldn't send anyone to the hospital, and that Derek would actually eat. When I saw Emily's recipe for Slow Cooker Sloppy Joe-Taters I knew it was something that I could easily recreate using our favorite sloppy joe recipe. When it came time to eat, everyone dug in and had no complaints. Although Derek said after that he would have just preferred chili on top... good thing no one asks for his opinion ;)

Sloppy Joe Baked Potatoes

Sloppy Joe Baked Potatoes

Sloppy joe baked potatoes are a great gluten free weeknight meal. Simply make your favorite sloppy joe recipe, and serve over baked potatoes!

Ingredients

  • 1 lb ground beef
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 2 tbsp vinegar
  • 1 tbsp yellow mustard
  • 1/3 cup water
  • 1 onion chopped
  • 1 tsp salt
  • 6 baked potatoes

Instructions

  1. Preheat the oven to 425°. Wrap each baked potato into aluminum foil. Place the potatoes in a large baking dish and bake in the oven for 40 minutes, flipping over half way.
  2. Brown the beef and onion and drain the fat. In a medium pan combine the beef, ketchup, sugar, vinegar, salt, mustard, and water and let simmer for 30 minutes. When liquid has reduced, remove from heat, and serve over baked potatoes.
