Turkey Taco Meal Prep Bowls

Over the last month or so, I've really fallen off of the meal prep bandwagon. Derek has been home a lot more after having some unresolved health challenges and just the simple act of one more person being in the house has thrown everything off quite dramatically. Luckily I've been able to get my workouts in and I'm still going strong for my half marathon in October, and my 15k on Labor Day.


Derek ran out of paid time off and his boss didn't want him working from home anymore, so he's back to work this week. That means the kids and I have had a few days now to settle back into our normal routines and I've been able to meal prep again. I forgot how much I really love having fresh food ready to go for me each day.


These turkey taco meal prep bowls are so easy to make. All you need is some 97% Lean Butterball® Ground Turkey (which you can easily grab at Walmart!), some taco seasoning, fresh veggies, and you're good to go. I love swapping the beef for Butterball Turkey in this recipe because it's a better-for-you alternative, it's all natural with no artificial ingredients, and turkey is so versatile you can use it in many different ways! Plus, there is a $1 off Butterball coupon at Walmart right now, which makes it a smart choice all the way around.




Ingredients:
1 20oz package 97% Lean Butterball Ground Turkey
1 cup tomatoes, diced,
1 cup corn
1 cup cilantro
1 lime
1 cup rice


Directions:
In a small pot, cook your rice according to package directions. In a large skillet on medium high heat, brown the ground turkey until cooked all the way through. When your turkey is cooked, add taco seasoning to taste and then you can start assembling your bowls.


To assemble your bowls, add 1/4 of the rice to the bottom of each container, and then 1/4 of all the meat into each container as well. Finish your bowls by equally dividing the remaining ingredients, and store in the fridge for up to 4 days.
