Pancakes are such a staple food in our house! I love making big batches on the weekend and then saving them in the freezer and popping them into the toaster on school mornings throughout the week. There is something about a good warm breakfast that just gets your day started in the right direction. These pancakes are super easy to make, super flavorful, and so fluffy! You'd never know the difference between these and a non-vegan pancake!
Ingredients:
1 1/2 cups all purpose flour
1 tbsp baking powder
1 tbsp sea salt
3 tbsp chia seeds
3 tbsp maple syrup
1 1/2 cups almond milk
1 tbsp apple cider vinegar
1 tbsp cinnamon
1 tbsp vanilla extract
Directions:
Mix all dry ingredients together in a bowl, and then mix in the wet ingredients. Let the batter set for 5-10 minutes to give the ingredients time to activate and for the chia seeds to plump a little bit.
Cook on medium heat on a lightly oiled pan for 3-5 minutes on each side. Or until the pancake bubbles on the first side, and then flip to cook the rest of the way through.
Top with your favorite berries and maple syrup.
