Derek and I are going out of town tomorrow and we had some ground beef in the fridge that was going to go bad if we didn't do something with it so I decided to make some meatballs and freeze them! Ordinarily I really don't care to much for meatballs just because when I was little my grandma would make them and they just tasted like mini versions of her meatloaf. Which tasted gross. But I decided I would give it a go and see how it went. They actually came out really good and I kind of just made the recipe up as I went along.
1 Western Family meatloaf seasoning packet
1 cup "Italian blend" cheese
1 lb ground beef

- Preheat oven to 375°
- lightly grease cookie sheet
- place 1 inch balls on cookie sheet
- bake for 20 minutes
- yields 16 meatballs
