Creamy Tomatillo Ranch Dressing

So last week was a bad week for our bank account. Mainly because all I seem to want lately are vegetarian salads from Costa Vida. Yeah,  I got one 5 times last week. at $5.70 a pop. Derek wasn't too happy. Just because it's nothing that I can't make at home for cheaper. Which turned out to be totally true. The salad that I love so much only consist of a tortilla, black beans, cilantro lime rice (to be posted tomorrow), this dressing, romaine lettuce, and salsa. Yes, that is it. Such basic ingredients and I was hooked. So here is my rendition of the Costa Vida Tomatillo Ranch Dressing.

Ingredients:
1 packet buttermilk ranch dressing mix
1 cup mayo
8 oz buttermilk
2 tomatillos (diced)
1 jalapeno (diced)
1/2 bunch cilantro
Juice from 1 lime

Directions:
-Put everything in the blender and then blend until smooth
-Pour into airtight container and refrigerate for at least 1 hour
-Should keep for 1 month
