Orange Jello Salad

Last year I wanted to make this huge elaborate picnic for Derek for memorial day which turned out to be dinner in the kitchen because it rained and was not good picnic weather, but I wanted it to be full of all his favorite foods so I tried to make this and it was a HUGE fail! It's one of his favorite things that his mom makes, and so I tried to be cool and make it, and it was just gross. But I'm now obsessed with the "World Wide Ward Cook Book", from Deseret Book, it's amazing and you should all buy it if you live in Utah, and if you don't you should order it online, right now! I got a new orange jello salad recipe from there and it was amazing, I literally had some everyday for like a week straight!

Ingredients:
1 3oz box orange jello
1 3oz box fat free, sugar free, instant vanilla pudding
1 3oz box fat free cook and serve tapioca pudding
3 cups water
1 can mandarin oranges (drained)
1 8oz container of cool whip

Directions:
In a medium saucepan, boil 3 cups water. Add the Jell-o, vanilla pudding, and tapioca pudding. Stir well (I used a whisk to get all the lumps out.) Cook until it gets bubbly and then remove from heat. Let cool completely and then add in your oranges and cool whip. Mix well and refrigerate until read to serve. best made the day before so it can set in the fridge  over night. Makes 8-10 servings.
