On Friday I mentioned how this Thanksgiving we just made things small and simple. I knew that part of our feast was going to involve turkey or chicken of some sport, but didn't know how we would carry that plan out. Derek and I both knew that our kids were less than likely to eat any of the Thanksgiving food, and we knew we were both less than likely to eat any of the actual leftovers. 

The perfect plan for this was to make a Tyson® Premium Cornish Hen that we picked up at our local Kroger store. If you're wondering what in the world a Cornish Hen is (like I was), it's basically just a really small chicken and was perfect for our little family of four. Derek and I were the only consumers of the actual meat, but there was more than enough for the two of us, and we had enough for a few leftovers. 

I love the Tyson® Premium Cornish Hens because they're not only easy to prepare, but they're packaged with no artificial hormones, ingredients, preservatives, or steroids. They're just 100% all natural delicious chicken. These are probably going to be the center of our holiday meals (or just a normal Sunday dinner), for a long time. Below is the delicious (and easy!), recipe we used for our Thanksgiving dinner, and I love that the entire chicken was ready to eat in about an hour!













Ingredients:
Salt
Lemon Pepper
Dried Basil
Poultry Seasoning
2 tbsp Olive Oil
1 Cornish Game Hen
1/2 Green Bell Pepper, diced
1/2 Yellow Onion, diced

Directions:
Preheat oven to 375°. Place your thawed Cornish Hen on a baking dish and rub 2 tbsp olive oil over the entire hen. Lightly sprinkle each of the spices unto your bird and then stuff the inner cavity with the diced bell pepper and yellow onion. 

Cover the hen with foil and then bake it in the oven for one hour. When the chicken is done, or an instant read thermometer reads 165°, your hen is done cooking. Remove the foil from on top of the chicken and then turn on the broiler for a few minutes to brown the outer skin, while keeping a close eye to prevent burning. Remove from oven and allow meat to rest for 10 minutes on a cutting board covered with foil.

  4. I have always struggled cooking chicken because of the texture. Looks delicious with all of the goodies you stuck inside!!
