White Chocolate Chip Craisin Cookies

Growing up I remember that neither one of my parents were huge bakers. My mom would make a brownie or cake mix every once in a while, but most of the treats that we had in the house were store bought (and still delicious). I remember one year for Christmas someone gave my dad a mason jar that had a cookie mix in it, and it sat on top of our microwave for years before I finally couldn't take it anymore and informed my dad that I would be making those cookies. 

I specifically remember that those cookies were a white chocolate chip craisin cookie. We weren't really big on adventuring into new foods, and so the craisins threw me off, but I baked them anyways. Those cookies were probably one of the best things I'd ever eaten, and I found myself questioning where craisins had been my entire life. I couldn't have been older than 14, so none of my life changing moments at this point were too thrilling as I'm sure you can tell. 

Last week I found myself craving the same nostalgic glory of those white chocolate craisin cookies from many moons ago and decided to finally whip some up myself. I decided to leave out the oatmeal, and just go for a more traditional cookie, and these are just so, so good. You needed them in your life yesterday. 

craisin cookies


Ingredients:
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1/2 tsp baking soda
1 tsp hot water
1 1/2 cups flour
1/2 cup white chocolate chips
1/2 cup craisins

Directions:
In a bowl, cream together the butter with the white and brown sugar. Once it's light and fluffy, beat in the egg, and the beat in the vanilla. Dissolve the baking soda into the hot water, and then blend that into the egg and sugar mixture. Mix the flour into the wet mixture until just combined and then mix in the craisins and white chocolate chips. Roll into tablespoon size balls and place on an ungreased baking sheet 2in apart. Bake in an oven preheated to 350° for 10-12 minutes. Remove from oven and allow them to cool on the baking sheet for two minutes before transferring them to wax paper on your counter top.
