Reese's Pieces Cookies are the perfect way to use up leftover Halloween or Christmas candy when you're needing a warm and gooey peanut butter fix.

It seems like after Christmas and Halloween we have an abundance of leftover candy to deal with. We could let the kids eat it in one setting and get a massive sugar high, or we could bake it into baked goods and let them get a sugar high. See what I did there? These Reese's Pieces Cookies are the perfect combination of peanut butter and chocolate they're super warm and gooey when they come out of the oven, and even taste great a few days after making them. Your kids will be dying to make these with their leftover candy. 

How to Make Reese's Pieces Cookies

To make these cookies you start by creaming your eggs, sugar, butter, and peanut butter together. Then you add in your remaining dry ingredients. At the very end you'll add you mix-in ingredients of chocolate chips and Reese's Pieces.  Then you need to chill the dough, and then bake. They take a bit longer to make and are a bit more involved, but totally worth it. 

How to Store Reese's Pieces Cookies:

Store these cookies in an airtight container at room temperature for up to three days. They can be heated in the microwave for 5-10 seconds to soften them up and give them that fresh from the oven taste.

Reese's Pieces Cookies are the perfect way to use up leftover Halloween or Christmas candy when you're needing a warm and gooey peanut butter fix.

Ingredients

  • 1 large egg
  • 1 cup light brown sugar, packed
  • 3/4 cup creamy peanut butter
  • 1/2 cup butter
  • 1 tbsp vanilla
  • 1 3/4 cup all purpose flour
  • 3/4 tsp baking soda
  • pinch of salt
  • 1 cup Reese's Pieces
  • 1 cup semi sweet chocolate chips

Instructions

  1. In the bowl of a stand mixer or in a large bowl with a hand mixer, add the egg, brown sugar, peanut butter, butter and vanilla until mix until smooth and creamy, about five minutes, scraping down the sides as needed.
  2. Gradually add in your flour, baking soda, and salt, and mix until all the ingredients just barely come together, don't over mix.
  3. Finally, add in your Reese's Pieces and chocolate chips, and mix until evenly incorporated, again, don't over mix.
  4. Using a standard 2 inch cookie scoop, scoop your dough out into balls, and place on a baking sheet lines with parchment paper. Cover the dough with plastic wrap and chill in the fridge for two hours.
  5. When ready to bake, preheat the oven to 350. Place the dough on a cookie sheet placed two inches apart. Bake for 8-9 minutes and pull out of the oven. Even if you don't think they're done, they are and will continue to bake on the cookie sheet.
  6. Let rest for 2 minutes before transferring to a wire rack to cool completely, about 12 minutes.
