Chocolate Coconut Balls & Giveaway!

I had some leftover coconut in the kitchen from making these amazing cookie bars earlier in the week, and while I was exploring pinterest earlier I saw a recipe for copy cat Almond Joys, Which I thought was an awesome idea, except I like mounds probably 100 times more, so I decided to make some Mounds Balls!

Ingredients: 
2 cups shredded coconut
1/3 cup corn syrup
1 tbsp coconut oil
Almond Bark
1/4 cup powdered sugar
1/4 tsp salt


Directions:

First mix together the unsweetened coconut, liquid sweetener, and salt. Toss until it’s entirely and evenly coated. Next add in the powdered sugar and mix again. Finally, melt the coconut oil if it’s not already in a soft state and add that in and mix.

Roll the coconut mixture into balls and placed on a cookie sheet lined with wax paper and place in the freezer for at least 10 minutes

Melt chocolate in the microwave in 30 second intervals while the balls are in the freezer. Once chocolate is melted and balls are firm, roll the balls into the chocolate and then place back on the cookie sheet. (If you want to add sprinkles to dress them up, so it now while the chocolate is still wet!)

Once all the balls have been dipped in chocolate, put them back into the freezer for at least 5 more minutes to give the chocolate time to set and harden. Then enjoy your Chocolate Mounds Balls!
