Derek loves Chinese food, pineapple, and chicken, so when I saw this recipe on pinterest it was really a no brainier to go ahead and make it. It was super easy and it was a crock pot meal, making it super easy all around! I adapted it to what we had in the kitchen, and to a dumb mistake made, but it came out tasting awesome! And Derek definitely approved!
Original Recipe from: Chef N Training
- 6 boneless chicken breasts
- 1/2 cup ketchup
- 1/2 tsp. teriyaki sauce
- 1 tsp. mustard
- 1/2 cup crushed pineapple with juice
- 1/2 cup brown sugar
- 1 can pineapple chunks (I added these in for the last 20 minutes of slow cooking for some added flavor and substance)
Mix all ingredients together. Bake at 350 for 45 minutes or stew in slow cooker for 4-6 hours. Serve over rice.
