Oatmeal Energy Bites: 4 Different Ways + VIDEO

A reoccurring theme over the last year for me has been making new habits, setting routines, and sticking to them. When I wrote about my morning routine a couple weeks ago, I had someone ask me why eating breakfast was part of the routine for the kids, but not for myself. The answer for that would be, I really don't like eating breakfast.



For most of middle school and high school I was an avid breakfast skipper, and would just wait until lunch time rolled around to eat something. When I first wake up, eating isn't a huge priority for me, and so I usually just sip on a bottle of water while I'm getting house work done in the morning, and on our way to the gym.

After the gym though, I'm usually starving and cannot wait to get home and eat something. I usually like to have some sort of snack before I start making the kids lunches to hold me over until I clean up their messes, and get them down for naps and quiet time, and then I'll eat my own lunch when they're settled. 

I like keeping my house well stocked in different varieties of these oatmeal energy bites. I like that they're all no bake recipes, the don't take long to make, and I can make one big batch a month and then store them in the freezer and thaw them as needed. I usually eat about 3-4 of these while I'm making the kids lunches and winding down from the gym, and they're perfect to curb my appetite for an hour or so until it's my time to eat lunch.

Chocoalte Peanut Butter
Ingredients:
1 c Old Fashioned Quaker Oats
2/3 c shredded unsweetened coconut
1/2 c peanut butter
1/2 c ground flax seed
1/2 c mini chocolate chips
1/3 c honey
1 tbsp chia
1 tsp vanilla 

Directions: 
Mix all ingredients together and then roll into tablespoon sized balls. let sit in the freezer for one hour, and then store in a ziplock bag in the fridge or freezer. Makes 20-24



Cranberry Coconut
Ingredients: 
1/2 c dried cranberries
1/4 c finely chopped walnuts
1/2 c Old Fashioned Quaker Oats 
1 c unsweetened coconut flakes
1/4 c ground flax seed
3/4 c peanut butter
1/4 c honey

Directions: 
Mix all ingredients together and then roll into tablespoon sized balls. let sit in the freezer for one hour, and then store in a ziplock bag in the fridge or freezer. Makes 20-24


Chocolate Hazelnut
Ingredients: 
1 c Old Fashioned Quaker Oats
2 tbsp chia seeds
1/2 c hazelnut spread
2 tbsp honey

Directions:
Mix all ingredients together and then roll into tablespoon sized balls. let sit in the freezer for one hour, and then store in a ziplock bag in the fridge or freezer. Makes 20-24



Pumpkin Spice:
Ingredients: 
2 c Old Fashioned Quaker Oats
1/2 c peanut butter
1/2 c pumpkin puree
1/4 c chia seeds
1/4 c honey
1 tsp vanilla
1/2 tsp cinnamon
1/2 c mini chocolate chips

  6. Yummy! I'll have to try these! I find myself staaaarving after working out or just after nursing and I need something quick and easy so I don't end up thinking I'm hungry enough for a second lunch! 😂
