Chocolate and Pumpkin Granola Bark

I'm surprised that this is the first pumpkin recipe of the season to make it's way onto the blog, and it doesn't involve any pumpkin puree. Weird stuff, I know. I made this snack a couple weekends ago and was perfectly content to munch on it throughout the week. Derek was a pretty big fan of it too which means I had to hide a few pieces in the back of the freezer. All moms do that with their chocolate right?




Ingredients:
8oz bittersweet chocolate, finely chopped
1/2 cup pumpkin granola
1/4 cup craisins
1/4 cup slivered almonds

Directions: 
Line bottom and sides of an 8x8 baking pan with foil.

Place chocolate in a microwave safe bowl and heat in 30 second increments, stirring in-between, until melted.

Spread chocolate in an even layer in pan. Quickly sprinkle with craisins, granola, and almonds. Press toppings gently into chocolate to make sure they stick.

Refrigerate bark until solid, about an hour and a half. Break into pieces and store in an airtight container in the refrigerator for up to one week.

  1. This looks like a perfect fall treat! Do you make your own pumpkin granola or do you buy it from a specialty store? I haven't heard of it before but it sounds amazing!
