The Best Chicken Quesadillas

With summer being here in full swing I'm all about the meals that involve super minimal cooking. Although our AC is fixed after living without it in the sweltering heat for a week, I still don't like to make a habit of turning on the oven and cooking in the kitchen for long periods of time each night. One of my saving graces in life has been picking up bags of Tyson Grilled and Ready chicken breast on my weekly trips to Walmart. They make life so easy and I love throwing the chicken in salads, (as seen here), or in easy tacos, burritos, quesadillas, etc... We may need to start laying off the Mexican food over here... But then again, who am I to not give the toddler what he wants? A parent who's not a sucker, that's who. 

We made these quesadillas last night for dinner and they were super filling. Like, "I haven't been this full since last Thanksgiving", kind of full. We also paired them with the new Bird's Eye Southwest Protein Blend though, which is a mixture of rice, lentils, black beans, corn, peppers, etc... so I mean there were filling things happening all over the place in this meal. No complaints one bit though. We like full stomachs in our house.

Ingredients:
Tyson Grilled and Ready Chicken
1 green pepper, sliced
1 large onion, sliced
vegetable oil
taco seasoning
cheddar cheese
8in flour tortillas
salsa, sour cream, fresh jalapenos, cilantro, for garnish
Directions:Heat oil in a large pan over medium heat. Saute the peppers and onions until soft, and then add in the chicken. Sprinkle with 2-3 tablespoons of taco seasoning to taste, and then mix together and cover with the lid to let the chicken cook through, about 3 minutes.

Once your chicken and peppers are cooked, remove them from the pan and set aside. Put your pan back on the burner turned to low heat, and spray with nonstick cooking spray. The layer in one tortilla, cheddar cheese, some of the chicken mixture, and then some more cheddar cheese. Cook for 2-3 minutes and then flip and cook for another 2-3 minutes.
Repeat this process until all your quesadillas are cooked (ours made about 4 quesadillas), and then serve warm!
