Derek is clearly the more fun parent in our home. He's made a tradition each year of making these super easy gingerbread cookies with the kids one weekend before Christmas. We've been using this recipe since we lived in Georgia five years ago, and it's been our go-to ever since.

What makes these gingerbread cookies soft and super easy is the fact that they never have time in the refrigerator. I love that I can make this dough and immediately start rolling and cutting with the kids and not have to pause, take a break, and get the kids all setup again when it's time to cook. We can plow straight through, clean the kitchen once, and be done!

How to Make Super Easy Gingerbread Cookies:

To make these gingerbread cookies, you're going to start by whisking together all of your dry ingredients. Then you'll cream together your butter and sugar. Then one-by-one you'll mix in your egg, molasses, and vanilla, mixing together in between each addition. Finally, you'll slowly mix in your flour mixture until just combined.

From here you'll roll out your gingerbread dough on a lightly floured surface until it's about 1/4 inch thick. place them on your baking sheet, and bake for 8 minutes. After 8 minutes they won't look done, but trust me, they are! Let them cool on the sheet for a couple minutes before transferring to a wire rack to cool!

The Best Icing for Gingerbread Cookies:

Traditionally every year when we make these cookies I purchase 2-3 bottles of Wilton's Cookie Icing. It's super easy for the kids to squeeze out and work with, doesn't make a huge mess, and it's a lot less work for me. Alternatively if we don't have those bottles on hand, I'll make my own using meringue powder, and this recipe.

Super Easy Gingerbread Cookies

Ingredients

  • 3 cups flour
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 2 tsp cinnamon
  • 1/4 tsp cloves
  • 6 tbsp unsalted, room temperature butter
  • 3/4 cup dark brown sugar
  • 1 egg
  • 1/2 cup molasses
  • 2 tsp vanilla

Instructions

  1. Preheat the oven to 375°. In a bowl, whisk together the four, salt, cinnamon, and cloves, then set aside. In a bowl with an electric mixer, cream together the butter and the sugar until just combined. Then beat in the egg. Then add in your vanilla and molasses and beat until it's all incorporated. Slowly mix in the flour mixture until it all comes together in a dough.
  2. On a floured surface, with a floured rolling pin, sprinkle a little flour on top of the dough and then roll it out until it's 1/4 in thick. Cut out desired shapes with your cookie cutters, and then place on a baking sheet lined with parchment paper. Bake in the oven for 8 minutes, and then cool on a wire rack. After 8 minutes of baking, they're not going to look done, but trust me, they're done!

  4. Nice recipe! I didn't trust that they were done at 8 min though and put them for a couple of minutes longer . . . WRONG CHOICE :) 8 min is definitely enough even though they don't look done.
