Recipe for Shrimp Scampi

This recipe comes together by boiling angel hair pasta in a pot on the stove. While that is boiling throw your frozen shrimp in a pan on high heat covered with the lid and let the shrimp thaw and heat all the way through. When the shrimp is an even temperature throughout, toss in all your remaining ingredients. Drain the pasta once cooked, toss with the shrimp and sauce, and you have the easiest shrimp scampi ever.

What Kind of Shrimp for Shrimp Scampi?

I personally like to use the shrimp that is frozen, precooked, peeled, and deveined. It makes weeknight cooking so much easier! You certainly can use fresh shrimp, or any shrimp you'd like, but I find the frozen, peeled, and deveined works best for our family!

Storing Leftover Shrimp Scampi

Shrimp scampi is not a dish that lasts very long after it's cooked. If sealed in an airtight container in the fridge, you could eat it up to two days later, but I wouldn't go any longer than that. You could freeze the sauce and shrimp in the freezer for several months if saved separately from the pasta.

This Recipe for Shrimp Scampi is the perfect weeknight dinner. It comes together in 15 minutes and it's a meal you can count on your kids eating without complaint.

Ingredients

  • 8oz Angel Hair Pasta
  • 2 tbsp Butter
  • 1lb Frozen Shrimp, peeled and deveined
  • 3 Cloves Minced Garlic
  • 1/2 tsp Red Pepper Flakes
  • 1/4 cup Chicken Broth
  • 1/4 cup Fresh Squeezed Lemon Juice
  • 1 tbsp Dried Parsley
  • 1/4 cup Grated Parmesan

Instructions

  1. Cook pasta according to package directions. While the pasta is cooking toss your frozen shrimp into a large pan on high heat and cover with a lid. When the shrimp is thawed and an even temperature throughout, above 3-5 minutes. Carefully drain any excess liquid from the pan, and then add in your remaining ingredients. Let the shrimp and sauce mixture come to a simmer.
  2. When the pasta is finished cooking, drain off all of the excess water and then add your pasta to the shrimp and sauce mixture. Toss everything together until well combined, and serve.
  3. melt butter in a large nonstick skillet over medium heat. When the butter is melted add the garlic, red pepper flakes, and shrimp to the pan. Cook on low 2-3 minutes until the shrimp is cooked and pink. Then add the lemon juice and chicken broth, and let it cook down for a few minutes.
  4. Drain the pasta when it is done cooking and then add it in the pan with the shrimp. Toss is with the Parmesan and dried parsley, then serve immediately!
